If you simply want to sit down in a restaurant and be waited on hand and foot, then this style of eating is not for you! You are as important in an MK restaurant as the chef. In fact, you are the chef! Ok, so you don't have to go through the rigmarole of actually preparing the raw ingredients. This is all done for you. But, you then have to 'cook' - to your own taste and preference - the raw ingredients that you choose from the menu. So no complaining to the chef that this or that is not cooked to your liking. You decide - YOU COOK!

The MK style of eating - 'Suki' in
Thailand but also known in other parts of Asia as
'Steamboat' - is basically a single pot of water placed in
the centre of the table - electrically heated to boiling
point - and then fed with the desired ingredients by all sat
around the table. It is essentially a team effort, where all
can wallow in praise when the result is good, but again all
have to share the blame if it is not so good!
It is a way of cooking that developed
in China - so they say, but in my younger days I was also
privy to eating from a pot of whatever was available, given
the hard times. The Thais - and MK - have adapted the
'event' in a wonderful relaxing way. All you have to do is
decide upon what to use!

Having been a party to such meals on a
few occasions, I begin to wonder if there is any real
science in cooking, for the haphazard insertion of
ingredients various always seem to turn into a dish that
everyone wants their fill of! It seems hard to go wrong. The
ingredients are fresh, and as varied as you want them to be.
Fish of all sorts, meta, vegetables and anything else that
can be eaten after boiling. Normally - in the company I keep
- a couple of eggs are beaten and then thrown into the pot!
Thoroughly wholesome good food - with
little if any fat content. A brilliant, relaxing way to eat
and have time to chat. After all, that is what eating is
about here in Thailand!
All then tuck into the 'perfect' meal
by use of a perforated ladle. Normal spoons are used for
scooping the soupy liquid out. My only reservation being
that Thais are expert in eating this 'soup' with chopsticks!
The attendant - realising that I was perhaps not keeping up
with my Thai friends - apologetically offered me spoon and
fork, which I unapologetically accepted, and got stuck in.

Fortunately for me, the spices are
served up in separate containers, so you can add as much -
or as little as you like!
On this occasion, the 'pot' meal was
complimented with a rather large portion of roast duck.
